My middle son Jake has been asking me to find a recipe for gingerbread that he can eat.
I found this recipe on 'the hungry mum' blog. It is listed as egg free. However we substituted the butter for vitality. So it became dairy free too.
Ingredients
125g vitalite
1/2 light brown sugar
1/2 cup of golden syrup
2 1/2 cups of self raising flour
2 tsps of ground ginger
1 tsp of bicarbonate of soda
Method
Preheat the oven to 190c/Gas mark 5.
Cream the butter and sugar together with a whisk.
Add the golden syrup and mix.
Sieve in the flour, ginger and bicarbonate of soda.
Mix well.
Knead the ingredients together.
Roll out to desired thickness for biscuits and cut out shapes.
Bake for 12 minutes.
Leave to cool.
Decorate if required.
