Jake's 1st Birthday Cake

With Jake suffering from his allergies to dairy, egg and to avoid all soya. I decided it would be much easier to make his cake.  Now I have been searching for a dairy and egg free cake recipe for a very long time.  Tried many and they have been disastrous. I have even attempted to make cakes using my normal recipes and replacing the egg with ‘egg free replacer’  still to not much good.  Most tasted like biscuits and hardly rose.
Then finally I found a recipe for a vegan chocolate cake on www.allrecipes.co.uk and it is amazing!!! I have made a full size cake from it and also made cupcakes.
For his cake I made a 2 layer Mickey Mouse themed cake.  As we love watching Mickey Mouse Clubhouse on the Disney channel. The top layer was Chocolate and the Bottom was an egg and dairy free fruit cake! Which I have to say is the easiest cake I have ever made! I then decorated it in lots of bright colours and made some cupcakes using the same chocolate cake recipe to accompany it and cut out Mickey & Minnie silhouette heads using my cutters.
For the party to ensure Jake didn’t eat anything that he shouldn’t and that his guests were free to give him food without worrying we ensured all food was egg, dairy and soya free.

Recipe for Chocolate Cake
  • 200g (7 oz) plain flour
  • 200g (7 oz) caster sugar
  • 4 tablespoons cocoa powder
  • 1 teaspoon bicarbonate of soda
  • 1/2 teaspoon salt
  • 5 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • 250ml (8 fl oz) water
Method
1. Preheat oven to 180 C  (Gas Mark 4) 2. Grease a round cake tin if large cake or just put cake cups in a muffin tin to support them. 3. Sieve together the flour, sugar, cocoa, bicarbonate of soda and salt together.
4. Add the oil, vanilla, vinegar and half the water, mix together adding a bit more water at a time until smooth.
5. Pour into prepared tin or divide into cupcakes. 6. If baking a large cake it takes about 40 minutes, keep checking. Muffin size cupcakes around 15 minutes again keep checking. 7. Remove from oven and allow to cool.
